The Moto Restaurant in Chicago features four changing menus full of Asian cuisine. Minimal decor (earth tones on the walls and floors with white linens and almond banquettes lining the dining rooms) and conversation level electronica music keep the focus on the meal. Waiters in black lab coats are knowledgeable and make the clientele comfortable. The menu offers four, seven, and ten course meals, as well as a tasting menu. The entire table must agree on their order, with the exception of vegetarians – accommodations are made for these patrons. Fennel is prepared four ways: purees, gelled cubes, ice, and candy. Try the sashimi course, with bites of salmon, scallops, and hamachi with coconut milk and black squid ink. Chef Homaro Cantu of the Moto Restaurant in Chicago prepares Whimsical Squeezes – eyedropper-like pipettes filled with purees of Swiss chard and bacon. Other favorites include pacific bass baked tableside in a transparent polymer box.
There is a well-rounded wine list for a range of prices, where you can choose your own wine by the bottle or glass, or have the staff progress you through the meal with the appropriate choice for each course.
